Ingredients
2 lbs Yukon gold potatoes
1/2 stalk of celery, diced small
3 tbsp of red onion, finely diced
1 large boiled egg
1/4 cup mayonnaise
1 tbsp yellow mustard
1 pinch of white sugar
1 tbsp cider vinegar
1 tsp salt
1 pinch of paprika

Instructions
1. Peel and dice the potatoes.
2. Steam for 25 minutes.
3. Let cool.
4. Finely dice celery and red onion.
5. Cut egg into chunks.
6. In a mixing bowl, mix the remainder of ingredients for the dressing.
7. Add all ingredients together and mix well.
8. Refrigerate for one hour and serve.
