Guelph's very own GoodLeaf Farms Pea Shoot Microgreens are sweet, crisp and delicate. They have a subtle pea flavour that even kids enjoy! Studies have shown microgreens can have up to 40x more vital nutrients than their mature counterparts which makes them a nutritional powerhouse. Pea shoots are an excellent source of vitamin A, a nutrient important to vision, the immune system, growth and reproduction, and vitamin K, which supports the maintenance of strong bones and improves bone density. Vertical farming (LINK?) has made it possible to grow local microgreens year round in Guelph.

Apples help detoxify food additives from your body. They are rich in vitamins, minerals, fibre, phytochemicals and pectin - which all cleanse the body. Ambrosia apples have a thinner skin so they are a good choice for blending (and they are grown locally!) The skin is where the most of an apple’s fibre resides. A raw apple with skin contains up to 115% more vitamin C, 142% more vitamin A, 332% more vitamin K, 20% more calcium and 19% more potassium than a peeled apple.

Cucumbers are 96% water so they are ideal for detoxification and preventing dehydration. Rich in phytonutrients which play an essential role in health and preventing disease. They are a good source of both vitamin K, which supports the maintenance of strong bones and improves bone density, and vitamin B5, which contributes to healthy skin, hair, eyes, proper functioning of the nervous system and a healthy digestive tract. Thanks to greenhouse technology, local cucumbers are now available year round.

Lemon juice is a natural diuretic which aids in digestion and helps flush out the body. One lemon provides about 50% of the recommended daily intake of vitamin C, which helps protect cells, form collagen, absorb iron, and supports the proper functioning of the immune system, wound healing, and the maintenance of cartilage, bones, and teeth.

Ingredients
1 pack (50g) GoodLeaf Farms pea shoot microgreens
1 local Ontario ambrosia apple, chopped
1local Ontario-grown English cucumber, chopped
Juice of one lemon

Instructions
1. Add all ingredients into a high speed blender.
2. Add enough cold water to cover.
3. Blend until smooth.
4. Serve immediately as is or on ice.
